Seaweed Soup in Its Own Cup

Earlier this month, Gordie Nash's Arcadia won the Golden Gate Yacht Club midwinters series, the Manuel Fagundes Seaweed Soup Regatta, and he brought the trophy home to Richmond YC to reside in a trophy case there. Some of the fun-loving folks at RYC got the notion to coerce the recipe for Seaweed Soup out of their counterparts at GGYC, track down the ingredients, cook up a batch of soup and put it in the Seaweed Soup Cup.

Gordie's sister-in-law Dawn Nash figured out the ingredient amounts. Here is the Richmond Riviera version of the recipe:
  • 3 cans Riviera minestrone
  • 2 cans Snappy Tom
  • 18" Portuguese linguica finely chopped & stir fried (renders out fat)
  • 1 package baby spinach, wilted

This is a thick, no tomato minestrone. The Snappy Tom adds some spice, tomato flavor and tang and thins it a bit.

During the prepping, a former GGYC junior from back in the day, Bill Travis, came by with stories of when he, as a sixteen year old, subbed for GGYC bartender Mac McGraw. He also claims to have seen Manny Fagundes with freeze-dried Portuguese seaweed.

Riviera Minestrone is based on an Italian Riviera recipe, and was found last week on sale at CVS Pharmacy.

By the way, it was the Seaweed Soup Regatta which qualified Golden Gate YC to challenge for the America's Cup.
